Description
Negu is a red wine from Baigorri winery, in La Rioja.
All the grapes have been hand-selected, bunch by bunch and berry by berry, using sorting tables with automatic computer vision systems.
The grapes are macerated in open-top stainless steel tanks, with temperature control and long intracellular fermentations. The must is naturally pumped over by gravity, using the cap-punching method with its own juice.
A pneumatic press is used for the final extraction of the wine, which is then transferred to wooden vats, where malolactic fermentation takes place. Once this is completed, the wines are distributed into French oak vats, where they are rounded for 4 months.
