Description
Lallier Blanc de Blancs Brut Grand Cru is one of the most unique and elegant champagnes from Maison Champagne Lallier, founded in 1906 in Aÿ. A cuvée born from the pioneering vision of James Lallier in the late 1990s, when he decided to create a Blanc de Blancs by breaking with the tradition of using Chardonnay exclusively from the Côte des Blancs and incorporating grapes from the Grand Cru of Aÿ for the first time—an area historically reserved for Pinot Noir. A Champagne of great purity, intensity, and elegance.
Made with 100% Chardonnay from two magnificent Grand Cru regions: Aÿ, which brings an intensity and power unusual for the variety, and the Côte des Blancs (Avize, Cramant, and Oger), renowned worldwide for the purity and mineral freshness of its Chardonnays. An unusual and complementary combination that defines the unique character of this champagne. The blend consists of 70% base vintage wines and 30% reserve wines.
Aging takes place for a minimum of 36 months on the lees in the Maison's cellars, with disgorgement occurring a minimum of 3 months before shipping. The dosage is just 7 g/L, to fully reveal the expression of the Grand Cru Chardonnay and the chalky terroir of Champagne.
It has a light yellow color with emerald reflections. On the nose, it is floral and elegant: notes of hawthorn, acacia, and vine blossom, with hints of hazelnut, praline, and delicate pastry nuances. On the palate, it offers the purity and freshness characteristic of Chardonnay, with a gentle generosity and a delicate power derived from the influence of Aÿ. Taut and mineral, with a finish that reflects the chalky terroir and a long citrus length with notes of lemon and yuzu.
Serve between 8–10°C in a glass intermediate between a flute and a wine glass. Ideal with aperitifs, oysters, scallops, roasted asparagus, grilled white meats, and delicate fish.
