Negu is a red wine from the Baigorri winery , in La Rioja .
All the grapes have been selected by hand, cluster by cluster and grain by grain using selection tables by automatic artificial vision systems.
Grapes macerated in open stainless steel tanks, with temperature control and long intracellular fermentations. The pumping over of the musts is carried out naturally by gravity, using the immersion of the cap with its own juice.
For the final extraction of the wine, a pneumatic press is used, then moving to wooden vats, where malolactic fermentation takes place. Once this is finished, the wines are distributed in French oak vats, where they are rounded for 4 months.
